My Favourite Colombian Food
Hello Blog! Today I'm gonna talk about my favourite Colombian food and I hope that you like and try to cook this delicious recipe.
As you know, Colombia has the advantage of being bordered by two oceans (the Atlantic Ocean and the Pacific Ocean) and due to that, we have lots of delicious seafood dishes and one of them is my favourite.
I'm talking about SQUID SOUP which is called SOPA DE CALAMARES and is known as an elegant dish that is common in posh restaurants but sometimes you can find it in a normal restaurant at a better price.
Basically, this dish is an amazing and perfect combination between SQUID and coconut milk which is incredibly tasty and the healthiest dish that I've ever tried.
The ingredients are as follows:
1 tablespoon butter
1 tablespoon olive oil
1/2 cup chopped green pepper
1/2 cup chopped red pepper
1 cup chopped onion
2 cloves garlic, chopped
1 cup grated carrots
1 cube of fish stock
1/4 teaspoon paprika
4 cups cream or milk
13.5 ounces of coconut milk
1/3 cup white wine
2 pounds of shrimps, peeled and cleaned
12 littleneck clams, cleaned
2 pounds of fish, cut into pieces
1 tablespoon chopped fresh coriander
1 tablespoon chopped fresh parsley
1 tablespoon tomato paste
And the preparation is so easy!
In a large saucepan, over a medium heat, heat the olive oil and butter then add the onion, red pepper, garlic, green pepper and carrots and sauté until it looks tender, for about 10 minutes or so and stir occasionally. Then add salt and pepper.
Add the cream, the fish stock and coconut milk and bring to a boil. Add the seafood and cover. Reduce the heat and cook for about 2 minutes until the clams are open.
Then remove from the heat and discard all clams that are unopened and at the end add the tomato paste and wine and simmer for 20 minutes. Garnish with fresh coriander and parsley and serve hot.
