My favourite dish : Hiroshima-fu Okonomiyaki
My favourite dish is a Japanese dish called Okonomiyaki (a Japanese Savoury Pancake containing a variety of ingredients.). In Japanese, “Okonomi” means “whatever you like”, “yaki” means “grill”. Okonomiyaki is a local speciality dish from Osaka but nowadays we can eat it everywhere in Japan.
Okonomiyaki is made from egg, flour and water with lots of toppings but I’d also like to introduce another dish called “Hiroshima-fu Okonomiyaki”. Hiroshima-fu means “Hiroshima style” which is completely different from the Osaka one. (Hiroshima is a city which is located in the west of Japan) It uses original ingredients and adds yakisoba men (Chow mein noodles).
First, mix the flour and water in the bowl to make the batter. Then spread the batter in a frying pan and put the shredded cabbage and thin pork belly in. Using the spatula, turn the okonomiyaki over very quickly. After a few minutes, put the okonomiyaki in the stir fried yakisoba men (use another pan). Add the egg to the other pan, break the yolk and spread it in a round shape and then put the okonomiyaki and the yakisoba men in it.
Finally, turn it over one last time and put some Okonomi sauce on it. This is a special sauce for the okonomiyaki which is a kind of Worcestershire sauce. Lastly, put some mayonnaise on it. Done!!!
I think the sauce is the most important part of the Okonomiyaki but we can even eat the Hiroshima-fu Okonomiyaki in London because there are a lot of Japanese food stores. If you have an opportunity to go to one, you should buy the Okonomi sauce and try making It!
